Dr. Saeideh Fatemizadeh

Saeideh Fatemizadeh is a postdoctoral researcher originally from Iran, currently based at Yıldız Technical University in Istanbul. As a Fellow under the ECO-SPHERE Cofund program, her research explores the production of exopolysaccharides by Furfurilactobacillus rossiae using inactive waste baker’s yeast hydrolysate, with a focus on assessing their bioactivity. She holds a Ph.D. in Food Microbiology from Ferdowsi University of Mashhad, and has a solid foundation in microbial biotechnology, functional foods, and fermentation technologies. Passionate about sustainable science, she is particularly interested in converting food industry by-products into high-value bioproducts with potential health /benefits.
